Really easy chicken soup

We're all unwell here. One day after another, a new member of the family came down with this dreadful headcold virus, until the last of us fell yesterday.

The only good thing about being all unwell at the same time is that we can sympathise with each other better, but it also slows down our activities.

Thankfully, hubby had enough energy to quickly run to the shops and buy some necessities, including the ingredients for a large pot of chicken soup.

Ingredients:
a large organic chicken
2 onions
several cloves of garlic
3-4 sticks of celery
5 carrots
large knob of ginger, peeled

1. Wash the chicken and place it into a large soup pot.
2. Prepare vegetables by peeling and roughly chopping into large pieces.
3. The key to this simple recipe is a blender (or food processor). Put the vegetables into the blender in batches, adding water, and blend until smooth. Pour over the chicken. Add more water if needed so that all the chicken is covered.
4. Bring to a simmer and leave to cook for at least 1.5hrs.
5. Remove the chicken. Break enough chicken off to use in soup, dicing or shredding before putting back into the liquid.
6. Season to taste and enjoy. OR .. add some more diced vegies and 1 cup full of brown rice for a heartier meal.

Chicken soup is really such a soothing meal when you're not well.

I'm not that good a chicken soup.
Do you wait to skim of the fat before you eat it? What do you use the rest of the chicken for, is it a bit dry? Have you tried this recepie in a crockpot?

Hello Michelle,

You can certainly skim the fat off. There are two other methods I use:
1) add some ice cubes, which will quickly solidify the fat and help you to scoop most of it out, or
2) (my preference when not in a hurry) is to actually chill the stock and take the fat off that way.

I have made chicken soup in a crockpot, but if using this method you need to be watchful. Excess time does dry the meat out, however, this is still excellent with carcasses. Crockpots certainly give a nice, deep flavour, though! :)

If I've done it in the pot (as opposed to crockpot), I pull the meat out when it's done but still firm. We then use it in sandwiches, or another meal as you'd use leftovers (eg: chicken & veg. pie).
