Mini quiches for lunch

It's Spring break, so we're catching up on our socialising. We were out all day yesterday visiting at one house, and now playing host to more friends today.

Sharing a meal with friends is always nice. Today we made some bread, a pot of soup, a platter of salad, and these mini quiches.


I used the "Impossible quiche" recipe, but altered it slightly in this way. I had some chicken left over, so that was diced and shared equally over a muffin tray. Then I added some mozerella cheese and shreaded spinach.
Pour over the "Impossible quiche" mixture, made with the following ingredients:

2 cups milk
3 eggs
1/2 cup SR flour
salt & pepper to taste

Bake at 180degC for around 1/2 hour and then we had a yummy plate to share.

Plenty of cups of tea, chatting about curriculum and activities, children playing outside ... what a lovely way to spend a day. :)

Neat idea! I adore quiche, but the hubby and child -- not so much. Maybe the tiny ones would be more palatable for them?

Yum! These look delicious. I'm off wheat at the moment (doing an experiment) but I might make these for the kiddies!

Quiche is a favourite here too ~ mini or otherwise. My mum uses an *impossible* quiche recipe that sounds similar to yours.
