I like experimenting with quick, but healthy meals for the family. Here's one I thought others may enjoy. I've used this idea for a few years, but not put it up on this blog before.
I usually purchase blue grenadier in the freezer section at Aldi, prepackaged. Ideally, I like buying it fresh at the markets, but this is the next best thing.
Two larges pieces of fish are thawed then cut into half for four servings.
To do this, use filo pastry: 2 pieces per person. Lay them flat and put on your fish fillet, then top with a few slices of any vegies you prefer. I've used tomato, zucchini (especially since it's zucchini season!), a sprinkling of dill and a small dab of butter.
Then just fold over the sides and roll it up into a neat parcel.
Place on baking paper and put into the oven (around 180degC) for 1/2 hr or until the pastry is browned.
If you decide to bake some chips with these, as I do, you need to get them started 1/2 hr earlier in a hot oven (200degC). Simply cut your potatoes into wedges, toss them in a little olive oil (and lemon zest if you like), spread onto baking sheet and put into oven.
