Sweet & sour chicken sausages

A quick post .. about a quick menu change.
Hubby announced he didn't want the chicken sausages for dinner, which stumped me. That's all I had defrosted!

So here's what I did:
I looked up a sweet and sour recipe online for ideas then ran into the kitchen to see what I had onhand.

The vegies were carrots, red/green/yellow capsicums, onion and broccoli, all stirfried in a wok.

The sauce: 2 tbsp arrowroot, mixed with the drained juice of a small tin of pineapple, then topped up with water to make 2 cups of liquid; a dash of soy sauce and tomato sauce; a tbsp brown sugar. Mix through with vegies until it thickened and bubbled.

All the sausages were then cut up and added to the mix, along with the drained pineapple pieces, then voilè! Just serve with steamed rice.

Thankfully this met with enough approval that they all want it again. ☺
