Orange and Chocolate Muffins


It's been a little while since I posted a recipe, and this is one we very much enjoy for afternoon tea, especially when we have guests as we did today.

This recipe is from a friend, whom we thank very much!


Orange and Chocolate Muffins
(makes 12 large)

2 whole oranges, washed and quartered (leave peel on)
2 eggs
½ cup oil (sunflower)
½ cup milk
1 cup sugar
2 ½ cups plain flour
4 tsp baking powder
½ tsp salt
½ cup chocolate drops

Preheat oven to 180˚C, and oil 12 cup muffin tin.

Put the oranges, eggs, oil, milk and sugar into a food processor. Process until well liquified.

Sift flour, baking powder and salt into large bowl. Add in the liquid mixture and chocolate drops. Mix until just combined.

Half fill the muffin tins. Bake for 20 mins., or until tops are colouring.
Ice with orange icing if desired.

That's amazing...my brother who is staying with us at moment and painting our new home, requested an orange cake with all the oranges my Dh parents gave us from there orchard.

I have been thinking in the last couple of days that I really need to look for a muffin recipe...well you have saved me time...

Could I do this recipe with the orange peel removed? Would it still work, as I have a severe allergy to something in the orange peel?

I haven't tried it that way, Jillian, but by all means have a go. Recipes are ideas only ... feel free to adapt it any way you need to!

Sounds great. The oranges in my bowl have been sitting there for a week now and it doesn't look like they are going anywhere!
