We tried something new for breakfast this morning. Our usual bowl of fruit, then a slice of some yummy lemon coconut bread. Well, what a treat!! Mariposa even ate ALL of her crusts without any prompting from me. :)
I used 1 cup each of dessicated and shredded coconut, as it was what I had on hand, but it turned out quite dry. You definitely need the shredded coconut for this recipe.
Nevertheless, we all enjoyed it, just as it was. IF there's any left over, it would be lovely warmed a little and served with a scoop of vanilla icecream for dessert.
