We've been baking all sorts of variations of muffins this week, trying to curb the hunger pains of growing children. I'm also really enjoying using a new silicon muffin tray which is great for easy removal of the baked goods, and a quick clean-up afterwards.
Here's a favourite recipe we use for Banana Muffins.
(makes 12)
2 cups SR flour
1 cup wholewheat flour (or use oat bran)
3/4 cup sugar (I use raw)
60g melted butter or sunflower oil
3/4 cup milk
2 eggs, lightly beaten
2 medium mashed bananas
** sometimes I add 1/2 cup chopped dates and sunflower seeds, or choc chips.
Mix all dry ingredients together in a large mixing bowl.
Combine the butter/oil, milk, eggs and banana then add to the dry ingredients all at once. Mix until all is moist, but do not overbeat ... it should look lumpy.
Spoon into muffin tray and bake in a 180degC oven for 15-20mins (until well risen and browned). Transfer to a wire rack and cool.
Grated apple instead of bananas also works well. You can also try it with 1/2 cup of cocoa powder, but may need to add more milk so the mixture isn't too dry.
