I'm running a little behind with the Home Audit, but learning a lot along the way. Do jump over to Rhonda's blog and read all the great advice there.
This is 'no spend' week (in conjunction with the audit) and it's come in very handy. After digging through my deep pantry shelves, I finally sorted out all my items again and took note of excesses and depletions. I don't actually have a stockpile cupboard, although I'm thinking of converting a space in the uppermost (and almost unreachable without a step-ladder) cupboard for all those extra packets and tins. If I make up a list of what's living up there, then I'll only need to transfer it down to the actual pantry when needed, leaving more of a workable space that's in easy reach.
I've found several tins of fish (tuna and salmon) to use, and thankfully 500g cheese, plenty of basic veg. and fruit purchased last Friday. Baking goods are still onhand, so I'll make those up as/if needed by hungry people. So, I've come up with this menu to get us through this week:
Sun - B: bowl of fruit and toast
L: omlettes and salad
D: lentil/veg soup with cheese scones
Mon - B: porridge and piece of fruit
L: diced remaining corned beef, salad in pita bread
D: meatloaf, steamed veg and baked potatos
Tue - B: egg, tomato and mushroom with toast
L: baked beans with added sauted onion/capsicum on potatos
D: 'fried rice': lots of veg and a wok-fried egg omlette
Wed - B: yoghurt (Easiyo) with museli
L: open sandwiches with salad and cheese
D: salmon impossible quiche with peas, salad
Thu - B: porridge and fruit
L: sandwiches (to take out)
D: beef pasties and salad
Fri - B: fruit compote, yoghurt, toast
L: sandwiches (to take out)
D: tuna lasagne (the 'bolognaise' is replaced by onions, grated carrot, celery, corn kernels, tomato puree and flaked tuna; still use 'cheese sauce').
Sat - Brunch: baked porridge, fruit
D: baked potatoes with various toppings

Watching with interest to see how you get on. ☺ Don't eat fishy things myself but Dearest shares his tins with the cat. lol
