Impossible Quiche - quick and easy

Quite a number of years ago, a friend gave me the recipe for an "Impossible Quiche". It's been very useful when days, like today, there are only a few bits and pieces in the pantry and fridge, I'm strapped for time but wanting something substantial.

I've modified the recipe quite a bit since I received it (removing the 1/2 cup oil for example). This may not be to everybody's personal taste, but it's certainly a recipe that you can play with to find what you and the family like.

Here are the BASIC ingredients:

3 eggs
2 cups milk
1/2 SR flour
1/2 cup grated cheese
Put into mixing bowl and whisk together.

Tonight I added the following:
2 grated potatoes
1 grated zucchini
1 small tin tuna
pepper to taste
1 tsp garlic powder
sprinking of dill
(otherwise, saute some onion and add when cooled)

Mix together. Pour into baking dish, sprinkle on a little extra cheese (I used up some left-over parmassen) and bake until golden on top (about 1/2 hr) in 180degC oven.

We served this with salad: mixed greens, cucumber, tomato, steamed green beans and peas.

This recipe is also lovely with either creamed corn, asparagus, corned beef and mushrooms, tuna and peas .... or whatever else you may have on hand.

I use this a lot! It's good with a tin of cream corn too.
